We’ve heard it said, “Blueberries are good for you!” Even comments like “Blueberries help your memory!”
And, since we are days away from having our buckets overflowing with blueberries, we thought we’d veer from our typical post and give you an easy-peasy blueberry recipe to put those berries to good use.
The funny thing about this post is that we really don’t “DO” recipes over here. In fact, we’ve only shared one other recipe. It, too, just happened to be a blueberry one. And, it went “viral” {in our opinion, at least…and led to some pretty crazy blog statistics for us over a few days} on pinterest!!
We realize the likelihood of that ever happening again is slim to none….yet, we did realize an interesting “fact” through it: most everyone cooks, but a select few sew.
Don’t despair. 98% {or more} of our content will still be sewing related. Yet, we do plan to throw in a recipe or two along the way….just for fun! Each will be “Frances Suzanne approved” {ie: tried and true recipes from our family to yours}. We like to cook…and, sewing does tend to make one hungry!!
So, about that recipe….
Sister Momma actually introduced us to this one {from her mother-in-law}.

2 cups blueberries (can use fresh or frozen)
1 cup sugar
1-2 TBP lemon juice
enough water to cover blueberries
1-2 TBP cornstarch

1. Heat blueberries, sugar, lemon juice, and enough water to cover blueberries over medium heat in saucepan for approximately 15 minutes.
2. Bring to a boil/simmering, stirring occasionally.
3. Mix 1-2 TBP cornstarch with small amount of water {just to acquire a liquid consistency}, and pour in blueberry mixture to thicken.
4. Once mixture has thickened as desired, serve over piping hot pancakes!
**If you have any syrup left over, put it in a jar and refrigerate. It makes a great blueberry jam that can be used on toast as well!
Hope you enjoy it as much as our family does! It is such an easy breakfast addition that really takes pancakes to the next level!! Not to mention, it’s a wonderful way to use those plump, juicy berries…first thing in the morning…while kick-starting your mind for the day!
When I was young, I requested blueberry syrup like this for every birthday breakfast. =) My family called it ‘compote’but the ingredients are the same!
